Gajar Halwa Recipe

INGREDIENTS 

  1. Shredded carrots 4 cups
  2. Milk 4 cups
  3. Ghee 45 gms
  4. Sugar ¼ cup
  5. Cardamom crushed 5 gms
  6. Roasted cashew nuts and raisins to garnish

Method of Preparation:-

  1. Wash and grate the carrots. Soak the raisins in water for 30 minutes. Blanch and shred the nuts.
  2. Take a Kadhai, add the grated carrots. Cook for 5-7 minutes (for evaporation of extra water of carrot).
  3. Add the milk. Cook on a low flame till the milk has absorbed, stirring occasionally. Add sugar, mix well and cook till the sugar has dissolved.
  4. Add ghee and simmer for 2-3 minutes. Add the slightly crushed cardamoms and the raisins. Mix well.
  5. Remove the gajar halwa from heat and arrange in a serving dish.
  6. Garnish with almonds and pistachios. Serve cold or hot at room temperature.
